Mussels with Spicy Coconut Sauce

  • 3 tablespoons coconut oil
  • 1 onion, finely chopped
  • 1/2 teaspoons garlic, finely chopped
  • 1 tablespoon lemon grass
  • 2 teaspoons chile, Thai
  • 100 grams mussels
  • 1/3 cups water
  • 1/4 cups sake
  • 1/2 teaspoons fish sauce

  • 1/2 cups coconut milk
  • salt and pepper
  • 1 lime, just the juice

  • Heat coconut oil in a pan and fry the onion until golden. Set the onions aside and let them dry.
  • In the same pan, with the remaining oil, add garlic, lemongrass, and Thai chili. Sauté until softened, then add the mussels, water, rice wine, and fish sauce.
  • Increase the heat and mix to combine all ingredients. Cover with a lid and let cook for 6-8 minutes. Discard any mussels that did not open.
  • Reduce the heat to medium, and add basil and coconut milk, cooking for one more minute.
  • Add black pepper to taste and remove the pan from the heat. Serve with lime and toasted bread.
