1 kilo mussels, clean in the shell
2 tablespoons butter
1 shallot, sliced
2 cloves garlic, sliced
5 tablespoons parsley, chopped
1 tablespoon flour
1 cup white wine
saffron
1 tablespoon lime juice
thyme

Boil the mussels in water for 5 min and reserve only those that have been opened and the cooking broth.
In a pan heat the butter and add the garlic, shallot and parsley. Add the flour and stir until it is well incorporated.
Add the white wine, the lemon juice, the saffron, the mussels and the cooking broth of the mussels.
Once it boils it rectifies seasoning. Serve and decorate the dishes with the thyme.
