  • 500 grams school shark
  • 2 cups lime juice
  • salt and pepper
  • 1 cucumber
  • 1/2 red onions
  • 3 tomatoes
  • 1 carrot
  • 1/4 cups cilantro
  • Jalapeño chile, for decoration

  • Place the shark in a food processor and grind for 3 minutes or until completely shredded.
  • Mix the fish, lime juice, salt, and pepper. Allow to marinate in the refrigerator for 15 minutes.
  • Peel, remove the seeds, and cut the cucumber. Dice the onion into small cubes and set aside. Chop the tomato without the pulp into small cubes. Grate the carrot and set aside.
  • Add the cucumber, onion, tomato, carrot, and cilantro to the bowl with the fish. Mix until combined and adjust the seasoning.
  • Spread a tostada with mayonnaise, serve some Nayarit-style ceviche, and decorate with chili and cilantro leaves.
