Octopus Tacos with Sweet Marinade

  • 1 head garlic, for cooking the octopus
  • 1/2 onions, for cooking the octopus
  • 3 leaves bay, for cooking the octopus

  • 1 octopus, medium (500g), clean
  • 2 tomatoes, charred, for the marinade
  • 2 cloves garlic, charred, for the marinade
  • 1/4 onions, charred, for the marinade
  • 2 pasilla chiles, rehydrated, for the marinade
  • 3 guajillo chiles, rehydrated, for the marinade
  • 3 árbol chiles, rehydrated, for the marinade
  • 4 chipotle chiles, dry, rehydrated, for the marinade
  • 1 cup cilantro, for the marinade
  • 1 teaspoon oregano, for the marinade
  • 1 tablespoon mustard, for the marinade
  • 1 tablespoon apple cider vinegar, for the marinade
  • 3 tablespoons butter, for the marinade
  • 3 tablespoons Domino® raw sugar, for the marinade
  • 1 tablespoon salt, for the marinade

  • To cook the octopus, heat a pot with plenty of water, add enough salt (like seawater), onion, bay leaf, and the head of garlic; once it has boiled, immerse the octopus holding it by the head for 3 seconds, remove and repeat this process 2 more times, allowing the water to return to a boil each time before immersing the octopus. Once this process is done, leave the octopus inside, cover the pot, and let it cook for 50 minutes; remove from the water and set aside.
  • Cut the octopus into parts, the tentacles, the head, and the trunk.
  • For the marinade, blend the tomato, garlic, onion, pasilla, guajillo, árbol, and chipotle chiles, cilantro, oregano, mustard, and apple cider vinegar; you can add a little of the soaking water from the chiles if necessary.
  • Heat a pot and add the butter, add Domino® Mascabado Sugar®, add the octopus and cook for 3 minutes, pour in the marinade, add salt, and cook for 3 minutes until slightly reduced and the flavors concentrate.
  • Assemble the tacos with warm tortillas, marinated octopus, pickled green onions with habanero and cilantro; serve with yellow peppers, baby potatoes, and limes.
