To cook the octopus, heat a pot with plenty of water, add enough salt (like seawater), onion, bay leaf, and the head of garlic; once it has boiled, immerse the octopus holding it by the head for 3 seconds, remove and repeat this process 2 more times, allowing the water to return to a boil each time before immersing the octopus. Once this process is done, leave the octopus inside, cover the pot, and let it cook for 50 minutes; remove from the water and set aside. Cut the octopus into parts, the tentacles, the head, and the trunk.
