  • Add water, bay leaves, onion, cloves, and garlic to a pot over high heat. Once it boils, submerge the octopus 3 times in a row for 2 seconds each time; this will help keep the meat tender and prevent the tentacles from breaking when they contact the boiling water, this action is known as startling the octopus. Then cook the octopus for 40 minutes or until tender.
  • Cut the octopus into medium pieces and set aside.
  • Pour olive oil into a saucepan over medium-high heat and cook the garlic for 3 minutes, then add the árbol chili and guajillo chili and cook for another 3 minutes, stirring constantly. Next, add the lime juice and the octopus pieces, seasoning with salt and pepper to taste. Afterwards, pour in the white wine and cook the garlic octopus for 8 minutes over medium heat, stirring constantly. Remove from heat.
  • Pour the garlic octopus onto a wide plate, decorate with chopped parsley, and serve with the exquisite Galletas Saladitas® Gamesa®, cherry tomatoes, and a delicious guacamole.
