Oil Rig Shrimp

  • 3 tablespoons olive oil
  • 1 tablespoon garlic, finely chopped
  • 1/4 cups onion, finely chopped
  • 1/2 kilos shrimp, clean
  • 1 cup orange juice
  • 1/8 cups ground chipotle chile
  • 1/2 cups sour cream
  • 2 tablespoons squid ink
  • 1 pinch salt
  • 1 cup cheddar cheese, grated
  • 1/2 cups leek, sliced thin and fried
  • flour tortillas, for accompaniment
  • guacamole, for accompaniment

  • Heat a skillet over medium heat with olive oil, cook the garlic and onion until softened, add the shrimp until well cooked. Remove the shrimp from the skillet and set aside.
  • Add orange juice, chipotle pepper, sour cream to the same pan and mix very well, add squid ink, mix and season with salt to your taste, add cheddar cheese to melt, incorporate the shrimp into the sauce.
  • Serve the shrimp, accompany the preparation with flour tortilla, guacamole, and a touch of crispy fried leek.
