Boil a large pot with plenty of water. Add the noodles and cook for 4 minutes or until tender. Strain them to remove the water and place them in a bowl.
In a bowl mix 2 tablespoons of oil, soy sauce, and honey. Mix this dressing with the noodles.
In a pan heat 1 tablespoon of the oil and cook the garlic over medium heat for 2 minutes.
Grease a pan. Stir fry the peppers. In a bowl mix the lemon zest, the juice and 1 tablespoon of oil. Mix this dressing with the shrimp and season with salt. Cook in the pan approximately 2 minutes on each side.
