Oven-Baked Salmon with Mustard Sauce and Germ

Nutritious oven-baked salmon accompanied by a super original sauce made with Natural Tomato Puree from Del Fuerte®, old-fashioned mustard, and a garnish of germ, will be the perfect meal if you want to eat healthily.

  • 1 tablespoon olive oil
  • 1 clove garlic, finely chopped
  • 1 cup Del Fuerte® natural tomato purée
  • 1/2 cups old style mustard
  • 1 sprig thyme
  • 1/2 cups lemon juice
  • 800 grams fresh salmon, 4 portions of 200 g
  • 1 sprig dill
  • 1/4 cups old style mustard
  • 2 tablespoons dried fine herbs
  • 1/2 cups white wine
  • 10 asparagus, blanched
  • 1 carrot, sliced
  • 100 grams alfalfa sprouts

  • Preheat the oven to 200° C.
  • Heat the olive oil in a pot over medium heat and add garlic, Natural Tomato Puree from Del Fuerte®, old-fashioned mustard, a sprig of thyme, and lemon juice. Cook until it reduces a bit and becomes a smooth sauce, then set aside.
  • Place the salmon on a baking tray and spread the portions with the mustard sauce, dill, and herbs, cover the tray with aluminum foil, and let cook for 10 minutes.
  • Remove the salmon from the oven and serve with the germ, asparagus, and carrot.
