Parmesan Fish Sticks with Red Cabbage Salad

Prepare these crispy and spicy breaded fish sticks for lunchtime. They are very juicy on the inside and have a bit of parmesan cheese that makes them unique. They are accompanied by a delicious red cabbage salad.

  • 4 fish fillets, cut into medium-thick strips
  • 1 teaspoon salt
  • 1 package Bimbo ® classic breadcrumbs
  • 1 teaspoon chile seeds
  • 1/4 cups Parmesan cheese, grated
  • 1 tablespoon oregano
  • 1/2 cups flour
  • 2 eggs, battered
  • 1 cup vegetable oil
  • 1/4 red cabbages, cut into thin strips
  • 1/4 cabbages, cut into thin strips
  • 3 carrots
  • 1/4 cups parsley
  • 1 cup low-fat mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1/4 teaspoons cilantro seeds
  • 1/2 teaspoons salt
  • 1/4 teaspoons pepper

  • Season the fish sticks with salt and pepper on all sides. Set aside.
  • In a bowl, mix Bimbo ® Classic Breadcrumbs with chili seeds, parmesan cheese, salt, and pepper. Set aside.
  • Bread the fish sticks by passing them through flour, egg, and the bread mixture.
  • In a deep skillet, heat the oil over medium heat and fry the fish sticks until they turn golden brown. Drain on paper towels.
  • For the salad, in a bowl mix the red cabbage with the white cabbage, the carrot, and the parsley. Add the mayonnaise, vinegar, mustard, cilantro seeds, salt, and pepper.
  • Serve the sticks with the salad.
