2 kilos shrimp, peeled and deveined, previously cooked
1 cup olive oil
1/2 liters apple cider vinegar, or apple cider vinegar
1 clove garlic
3 onions, medium
20 black peppercorns
1 teaspoon ground black pepper
2/3 tablespoons oregano, ground
6 carrots
1 can pickled Jalapeño chiles
2 leaves bay
2 limes, sliced very thin

One day in advance, clean the garlic cloves and slice the onion into very thin wedges.
A pot is placed with 1 1/2 cups of vinegar, garlic, onion, and whole peppers.
Let it boil and cook for 5 minutes.
Add the peeled carrot cut into rounds, ground pepper, salt, and 1 cup of olive oil. Let it cook for 15 minutes (or until the carrots are soft).
Remove from heat and add the pickled chiles.
Add oregano, bay leaves, and lemons.
The entire sauce is left to marinate in the refrigerator in a well-covered container.
The next day, cook the shrimp and add them to the pickling liquid.
Stir well, adjust the seasoning, and serve cold.
