Ingredients

10 portions
  • 2 kilos shrimp, without heads and without shells, previously cooked
  • 1 cup olive oil
  • 1/2 liters apple cider vinegar, or cider vinegar
  • 1 clove garlic
  • 3 onions, medium
  • 20 whole black peppers
  • 1 teaspoon ground black pepper
  • 2/3 tablespoons oregano, ground
  • 6 carrots
  • 1 can pickled jalapeño pepper
  • 2 leaves bay
  • 2 limes, very thin slices

Preparation

One day in advance, the garlic cloves are cleaned and the onion is sliced into very thin wedges.
Put a pot with 1 1/2 cup of vinegar, garlic, onion and whole peppers.
Boil and cook for 5 minutes.
Add the carrot, peeled and cut into wheels, the ground pepper, salt and 1 cup of olive oil. Cook for 15 minutes (or until carrots are soft).
It is removed from the heat and the pickled peppers are added.
The oregano, bay leaf and lemons are added.
Let all the sauce marinate in the refrigerator in a well covered container.
The next day, cook the shrimp and add to the marinade.
Stir well, correct the seasoning and serve cold.
