Preparation
One day in advance, the garlic cloves are cleaned and the onion is sliced in very thin sections.
Put a pot with 1 1/2 cup of vinegar, the garlic, the onion and the whole peppers.
Let it boil and cook for 5 minutes.
Add the peeled and cut carrot in wheels, the ground pepper, salt and 1 cup of olive oil. Let it cook for 15 minutes (or until the carrots are soft).
It is removed from the heat and the pickled chiles are added.
Add oregano, laurel and lemons.
Let the whole sauce marinate in the refrigerator in a well-covered container.
The next day, cook the shrimp and add to the marinade.
Stir well, rectify the seasoning and serve cold.
