Quinoa Bowl with Teriyaki Chicken

  • 1 cup quinoa, white, rinsed and drained
  • 1 chicken breast, boneless and skinless
  • 1 cup pineapple, cut into cubes
  • 1/2 cups teriyaki sauce, to marinate the chicken
  • 2 tablespoons sesame oil
  • 1 tablespoon ginger, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups red onion, finely chopped
  • 1 cup carrot, cut into small cubes and strips for decoration
  • 1 cup pumpkin, cut into small cubes
  • 1 pinch salt
  • 1 pinch pepper
  • 1/4 cups red cabbage

  • Heat a pot over medium heat with water and cook the quinoa until it pops, strain, and set aside.
  • In a bowl, marinate the chicken breast and pineapple with teriyaki sauce for 20 minutes, set aside.
  • Heat a pan over medium heat with sesame oil, cook the ginger, garlic, onion, carrot, squash, and add the quinoa, season to taste with salt and pepper.
  • Heat a pan over medium heat and cook the chicken with the pineapple until the chicken is well cooked, remove, and cut into medium cubes on a cutting board, drizzle with a bit of the teriyaki reduction, and set aside.
  • In a bowl, serve the quinoa mixture, the teriyaki chicken with pineapple, and decorate with strips of carrot and purple cabbage.
