Ingredients

2 portions
  • enough Water
  • 1 cup quinoa, white, rinsed and drained
  • 1 chicken breast, boneless and skinless
  • 1 cup pineapple, cut into cubes
  • 1/2 cups teriyaki sauce, to marinate the chicken
  • 2 tablespoons sesame oil
  • 1 tablespoon ginger, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups red onion, finely chopped
  • 1 cup carrot, cut into small cubes and strips to decorate
  • 1 cup pumpkin, cut into small cubes
  • 1 pinch salt
  • 1 pinch black pepper
  • 1/4 cups purple cabbage

Preparation

Heat a pot over medium heat with water and cook the quinoa until it burst, strain and reserve.
In a bowl, marinate the chicken breast and pineapple with teriyaki sauce for 20 minutes, set aside.
Heat a pan over medium heat with the sesame oil, cook the ginger, garlic, onion, carrot, pumpkin and add the quinoa, season to taste with salt and pepper.
Heat a pan over medium heat and cook the chicken with the pineapple until the chicken is well done, remove and on a small board cut in medium cubes, cover with a little of the teriyaki reduction and set aside.
In a bowl serve the mixture of quinoa, teriyaki chicken with pineapple and decorate with strips of carrot and purple cabbage.

PRESENTATION

Serve in a bowl with the toppings of carrot, pumpkin, teriyaki chicken, pineapple and purple cabbage.

TIPS

You can substitute the quinoa for couscous, both are very good options to provide carbohydrates to your diet that are always essential.
