Rainbow Sushi with Tampico Filling

  • 5 surimi, finely chopped
  • 1/2 cups white onion, finely chopped
  • 1/4 cups serrano chile, finely chopped
  • 1 cup mayonnaise, chipotle
  • 2 tablespoons rice vinegar
  • 3 tablespoons soy sauce
  • 50 grams octopus, cooked
  • 50 grams shrimp, cleaned and blanched in boiling water
  • 50 grams tuna
  • 2 nori
  • 2 cups sushi rice, cooked and prepared with rice vinegar and sugar
  • 1 avocado, sliced for filling and for decoration
  • 1 cucumber, cut into strips for filling and slices for exterior

  • With your Vasconia® Edge Keeper® knife, finely chop the surimi.
  • In a bowl, mix all the tampico ingredients well until you get a homogeneous mixture. Set aside.
  • Cut thin slices of cucumber, octopus, salmon, shrimp, and tuna with your Vasconia® Edge Keeper® knife. Set aside in the refrigerator.
  • On a board, place a bamboo mat wrapped in non-stick plastic; on the mat, place a sushi seaweed and spread the rice. Flip it over and in the center of the seaweed, fill with a bit of tampico, avocado, and cucumber.
  • With the help of the mat, close the roll and press well to shape it.
  • Decorate with slices of avocado, octopus, salmon, shrimp, tuna, and cucumber, alternating each one. Press down again with the mat.
  • Cut the roll into slices approximately 2 fingers wide and serve with prepared soy sauce. Enjoy.
