Red snapper with mint pesto

A rich and light fish; red snapper with mint pesto. The mint gives it a very fresh touch that you will want to eat on very hot days.

  • 1/2 cups parsley, finely chopped (tight)
  • 1/2 cups peppermint, tight
  • 2 tablespoons lime juice
  • 1 clove garlic
  • 1/3 cups olive oil
  • 1 teaspoon red wine vinegar
  • 4 fish, 150 gr each

  • Mix the parsley, mint, garlic, olive oil, lime juice and vinegar.
  • Cook the fish on the grill, 1 to 3 minutes per side. Transfer to a plate and serve the sauce on top.
