Roasted Salmon with Cucumber and Lemon Sauce

A delicious grilled salmon with a fresh cucumber, mint, ginger, chili, and lemon juice sauce. It's a fresh dish that's very easy to prepare. A different way to cook this delicious fish and surprise the whole family.

  • 4 salmon fillet, 200 grams each
  • 1 cup cucumber, chopped
  • 1/2 tablespoons fresh ginger, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 tablespoons peppermint, chopped
  • 2 tablespoons lime juice
  • 1/8 tablespoons red chili flake
  • 1/4 tablespoons coarse salt
  • 1/2 tablespoons olive oil
  • 1/2 cups carrot, julienned
  • 1/4 cups red bell pepper, julienned
  • 1 tablespoon vegetable oil

  • Heat a grill over medium heat, cook the seasoned salmon with salt and pepper for 8 minutes on each side, starting with the skin side. Remove from heat and keep warm.
  • In a pan, heat the vegetable oil, cook the julienned carrot and bell pepper until both are slightly soft.
  • In a deep bowl, mix the cucumber, ginger, cilantro, mint, lemon juice, chili, and salt. Add the olive oil and mix well.
  • Serve each salmon with julienned carrot and bell pepper; top with the cucumber sauce.
