Roasted Salmon with Cucumber and Lemon Sauce

A rich grilled salmon with a fresh sauce of cucumber, mint, ginger, chili and lemon juice. It is a fresh dish and very easy to prepare. A different way to prepare this delicious fish and surprise the whole family.

Ingredients

4 portions
  • 4 salmon fillets, 200 grams each
  • 1 cup cucumber, chopped
  • 1/2 tablespoons fresh ginger, chopped
  • 1 tablespoon fresh coriander, chopped
  • 1/2 tablespoons Fresh mint, chopped
  • 2 tablespoons lemon juice
  • 1/8 tablespoons red chili flake
  • 1/4 tablespoons coarse salt
  • 1/2 tablespoons olive oil
  • 1/2 cups carrot, cut in julienne
  • 1/4 cups red pepper, cut in julienne
  • 1 tablespoon vegetal oil

Preparation

Heat a grill over medium heat, cook the salmon seasoned with salt and pepper for 8 minutes on each side, starting on the side of the skin. Remove from heat and keep warm.
In a pan heat the vegetable oil, cook there the carrot julienne and the pepper until both are slightly soft.
In a deep bowl mix the cucumber, ginger, coriander, mint, lemon juice, chili and salt. Add the olive oil and mix well.
Serve each salmon with carrot and pepper julienne; cover with cucumber sauce.

PRESENTATION

Serve the dishes and decorate with the cucumber sauce.

TIPS

Cook the salmon first on the side of the skin to make it crispy.
