After eating this delicious dish at the famous Nobu restaurant, I discovered this recipe very similar to the one I tried. The tempura shrimp comes in a spectacular spicy and creamy sauce!
Make the creamy sauce like a mayonnaise, mixing the egg yolks with salt, 1/2 teaspoon of pepper, rice vinegar, and gradually adding the oil.
Add the spicy garlic sauce and set aside.
Prepare the tempura batter, add the egg yolk to the ice-cold water and stir well. Add the flour until well combined. (The mixture will be a bit lumpy).
Prepare the shrimp, removing the heads, tails, and skin.
Put about 5 cm of oil in a pot until it reaches a temperature of 170 degrees Celsius (measure it with a special thermometer).
Dip the shrimp in the tempura batter and then fry them for 1-2 minutes. Let them dry on disposable paper towels.
Place the fried shrimp in the prepared creamy sauce and add the teaspoon of lemon.
Garnish with chopped green onion.
