Cut the salmon into very small pieces and serve them in a bowl. Squeeze the two lemons and add salt and pepper to taste.
Gently stir to ensure the salmon is well coated and adjust salt and pepper as needed. Refrigerate for an hour before serving. Remove excess lemon.
Before serving, place some of the salmon preparation in the center of a plate. Place goat cheese on the sides and if you like, a bit of avocado on top of the tartare.
