Salmon in Blueberry Sauce

This delicious recipe for salmon in La Costeña® blueberry sauce is tasty and very easy to prepare, featuring a rich sauce flavored with red wine, balsamic vinegar, and rosemary. Best of all, you don’t need an oven to prepare it and make this sophisticated recipe.

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoons onion, chopped
  • 1 clove garlic, chopped
  • 1/4 cups red wine
  • 2 tablespoons balsamic vinegar
  • 1 can La Costeña® cranberry sauce, (520 g)
  • 1 sprig rosemary
  • 4 salmon fillet, (200 g each)

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 tablespoons dried cranberries, for garnish
  • 1 green onion, cut into thin rings for garnish
  • 4 sprigs fresh rosemary

  • For the blueberry sauce, in a pot over medium heat, cook the onion with the oil and butter. Add the garlic and cook for 1 more minute. Add the wine and vinegar all at once, let it reduce for 1 minute, and incorporate La Costeña® Blueberry Sauce.
  • Let it come to a boil and add the rosemary, cook for about 10 minutes. Season with salt and pepper. Let it cool slightly.
  • Blend the previous preparation until you achieve a smooth sauce. Return to the pot and cook for 5 more minutes or until you obtain a consistent sauce.
  • Season the salmon fillets with salt and pepper and cook in a skillet over medium heat with a bit of butter and olive oil.
  • Serve the salmon with the sauce hot, garnish with dried blueberries, sliced green onions, and fresh rosemary.
