Salmon in Cranberry Sauce

This rich recipe of salmon in La Costeña® cranberry sauce is delicious and very easy to prepare, it has a rich sauce flavored with red wine, balsamic vinegar and rosemary. The best part is that you do not need an oven to prepare it and make this sophisticated recipe.

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoons onion, chopped
  • 1 clove garlic, chopped
  • 1/4 cups red wine
  • 2 tablespoons balsamic vinegar
  • 1 can La Costeña® cranberry sauce, (520 g)
  • 1 sprig rosemary
  • 4 salmon fillet, (200 gc / u)
  • salt
  • white pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 tablespoons dried cranberries, to decorate
  • 1 green onion, cut into thin rings to decorate
  • 4 sprigs fresh rosemary

  • For the cranberry sauce, in a saucepan over medium heat cook the onion with the oil and butter. Add the garlic and cook 1 minute more. Add suddenly the wine and vinegar, let reduce 1 minute and add the La Costeña® Cranberry Sauce.
  • Let it boil and add the rosemary, cook about 10 minutes. Season with salt and pepper. Cool slightly
  • Blend the previous preparation until a homogeneous sauce is obtained. Return to the pot and cook 5 more minutes or until you get a consistent sauce.
  • Salpinate the salmon fillets and cook in a pan over medium heat with a little butter and olive oil.
  • Serve the salmon with the hot sauce, garnish with dehydrated blueberries, onion rings and fresh rosemary.
