Blend the almond milk, sour cream, walnut, and white wine until fully integrated. Set aside.
Sauté the garlic and green onion in a pan with melted ghee butter over medium heat until they are slightly translucent. Lower the heat, add the mushrooms, and cook for 6 minutes or until they are reduced and starting to brown, stirring constantly. Then pour in the creamy sauce, season with salt and pepper, and cook for 6 minutes or until the flavors meld together, remembering to keep the heat low to avoid the sauce curdling, then remove from heat. Blend the sauce to thicken and keep warm until use.
Preheat the oven to 150 °C.
Season the salmon slices on both sides, place them on a baking tray, add a little cooking spray, and bake at 150 °C for 15 minutes.
Serve the sauce on a flat plate, place the salmon, add the sautéed mushrooms, and the chopped green onion tops. Serve with steamed vegetables.
