Salmon in Creamy Mushroom Sauce

  • 1 cup almond milk
  • 1/4 cups sour cream, light
  • 2 tablespoons pecans
  • 1/4 cups white wine
  • 1 tablespoon ghee
  • 1 tablespoon garlic, finely chopped
  • 1/4 cups green onion, with tail, finely chopped
  • 2 cups button mushrooms, in quarters

  • 3 salmon, slices of 200 g each

  • 1 cup button mushrooms, sautéed, for garnish
  • 2 tablespoons green onion stalks, finely chopped, for garnish
  • vegetables, steamed, for garnish

  • Blend the almond milk, sour cream, nutmeg, and white wine until fully integrated. Set aside.
  • Sauté the garlic and green onion in a pan with melted ghee butter over medium heat until slightly shiny. Lower the heat, add the mushrooms, and cook for 6 minutes or until they reduce and begin to brown, stirring constantly. Then pour in the creamy sauce, season with salt and pepper, and cook for 6 minutes or until the flavors meld, remember to do this over low heat to avoid the sauce breaking, then remove from heat. Blend the sauce to thicken and keep warm until use.
  • Preheat the oven to 150 °C.
  • Season the salmon slices on both sides, place on a baking tray, add a little cooking spray, and bake at 150 °C for 15 minutes.
  • Serve the sauce on a wide plate, place the salmon, add the sautéed mushrooms and the chopped green onion. Serve with steamed vegetables.
