Salmon Salad Sandwich

Salmon fillets made into salad with lemon on ciabatta or focaccia bread.

  • 2 salmon fillet, grilled
  • 2 onions, finely chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon lime zest
  • 1/2 cups low-fat mayonnaise
  • 4 slices ciabatta bread, or focaccia

  • This recipe is ideal for when you have leftover salmon from dinner the night before; if not, simply grill the salmon fillets for about 5 minutes on each side or until cooked through.
  • In a bowl, mix the salmon with the onion, lemon juice, lemon zest, and mayonnaise. Break the salmon apart with a fork and mix well.
  • Season the salmon with salt and pepper.
  • Cut the bread in half, bake for 5-6 minutes until slightly toasted.
  • Serve 2 slices of bread with 1/4 of the salmon salad.
