This recipe is ideal for when you have leftover salmon from dinner the night before; if not, simply grill the salmon fillets for about 5 minutes on each side or until cooked through.
In a bowl, mix the salmon with the onion, lemon juice, lemon zest, and mayonnaise. Break the salmon apart with a fork and mix well.
Season the salmon with salt and pepper.
Cut the bread in half, bake for 5-6 minutes until slightly toasted.
Serve 2 slices of bread with 1/4 of the salmon salad.
