This recipe is ideal for when you have salmon that you have left over from a dinner the night before, if you have not just grilled the salmon steaks for approx. 5 minutes on each side or until well cooked.
In a bowl, mix the salmon with the onion, the lemon juice, the lemon zest and the mayonnaise. Break the salmon with a fork and mix well.
Season the salmon with salt and pepper.
Cut the bread in half, bake for 5-6 minutes until lightly toasted.
Serve 2 slices of bread with 1/4 of the salmon salad.
