Cut the salmon into cubes about 8mm; halve the tomatoes, remove the seeds, and cut into cubes. Chop the green onion and cilantro.
Mix the salmon with salt and pepper, the herbs, lemon juice, orange zest, olive oil, and mayonnaise. Add the tomatoes and mix until well combined.
Place the metal ring in the center of a plate and fill it with the salmon mixture, pressing lightly with a spoon. Carefully lift the ring upwards and decorate with a few lettuce leaves.
