Salmon with Lemon, Capers, and Rosemary

Very simple and tasty recipe to prepare salmon. The salmon packets cooked with lemon juice, Marsala wine, capers, and rosemary.

  • 4 salmon fillet
  • 1/4 cups olive oil
  • 1/2 teaspoons salt
  • 1/2 teaspoons black pepper, freshly ground
  • leaves rosemary, finely chopped
  • 1 lime, in slices
  • 1/4 cups lime juice
  • 1/2 cups marsala wine, or dry white wine
  • 4 teaspoons capers

  • Brush the top and bottom of the salmon fillets with olive oil, salt, freshly ground pepper, and rosemary. Place each piece of salmon on a sheet of aluminum foil large enough to fold and wrap the salmon.
  • On top of each fillet, place 2 slices of lemon, 1 tablespoon of lemon juice, 2 tablespoons of wine, 1/4 tablespoon of chopped rosemary, and 1 teaspoon of capers. Close the aluminum foil sheets so that the juices do not escape. Place the salmon packets on a baking tray.
  • Preheat the oven to 200 degrees Celsius (400 F) and cook the salmon packets for 15 minutes. Serve immediately with salad and rice.
