Very simple and rich recipe to prepare salmon. The packets of salmon cooked with lemon juice, Marsala wine, capers and rosemary.

Ingredients

4 portions
  • 4 salmon fillets
  • 1/4 cups olive oil
  • 1/2 teaspoons salt
  • 1/2 teaspoons black pepper, freshly ground
  • leaves rosemary, finely chopped
  • 1 lemon, in slices
  • 1/4 cups lemon juice
  • 1/2 cups Marsala wine, or dry white wine
  • 4 teaspoons capers

Preparation

Brush the top and bottom of the salmon fillets with olive oil, salt, freshly ground pepper and rosemary. Place each piece of salmon on a sheet of aluminum foil large enough to fold and wrap the salmon.
On top of each steak, place 2 slices of lemon, 1 tablespoon of lemon juice, 2 tablespoons of wine, 1/4 tablespoon of chopped rosemary and 1 teaspoon of capers. Close the sheets of aluminum foil so that the juices do not go out. Put the salmon packages on a baking sheet.
Preheat the oven to 200 centigrade (400 F) and cook the salmon packages for 15 minutes. Serve immediately with salad and rice.

PRESENTATION

They can be served in the foil packets or opened and served individually.

TIPS

You can also make the packets with waxed paper, for a prettier presentation.

Hola Lorenza, sabes que nosotros vendemos salmón en Argentina (salmón chileno) así que siempre voy probando distintas recetas. Esta combinación con alcaparras es excelente! nunca preparé el salmón con las alcaparras al horno, pero suelo preparar una salsa para cuando invito amigos: salmón ahumado, alcaparras, cebolla de verdeo y queso untable tipo filadelfia todo triturado como paté para untar y es una delicia! las alcaparras le dan un gusto especial al salmón.... te invito a que visites nuestro blog.... muchos saludos! https://adcsalmon.com/Blog/

He preparado l receta con una pequeña variante, preparó todo como lo indican pero antes de meter al horno doy una leve pasada por la sartén para que adquiera un color dorado, posteriormente lo termino de cocinar en el horno envuelto en el papel aluminio, queda dorado por fuera y súper suave y jugoso por dentro.
