Salmon with Mango and Chive Sauce

A light recipe with lots of flavor. Salmon makes a delicious combination with the taste of mango and lemon.

  • 4 salmon fillet, fresh
  • 2 manila mangoes
  • 3 limes, its juice
  • 5 chives, chopped
  • pepper, to taste
  • 2 tablespoons olive oil
  • salt, to taste

  • Heat the olive oil in a large skillet over medium heat.
  • Place the 4 fillets skin-side down and cook for 5 minutes. Flip and cook for 5 more minutes.
  • If you want the skin of the salmon to be crispy, flip again and cook for 5 more minutes. Taste a small piece of salmon to check for doneness.
  • While the salmon is cooking, chop the mangoes and mix with lemon juice, chives, salt, and pepper.
  • Place each salmon fillet on an individual plate and add 3 tablespoons of mango sauce over the fish and serve.
