This salmon recipe is a delight; it combines interesting flavors that will make you addicted. The flavors of achiote, orange, mango, and the combination in the pico de gallo come together, you have to try it.
Cut the salmon fillet into medium cubes and set aside.
Blend the orange juice and lime juice, the 2 cloves of garlic, the vinegar, and the achiote (previously dissolved with a little hot water to make it liquid).
Marinate the salmon with the achiote mixture for one hour.
For the pico de gallo:
Dice the tomato, chili, mango, and onion into small cubes. Chop the cilantro finely.
Add all the ingredients into a bowl. Pour olive oil, salt, and pepper to taste.
Fry the marinated salmon over medium heat until the sauce thickens a bit.
Serve with pico de gallo.
