Salmon with pico de gallo

This recipe for salmon is a delight; since it combines interesting flavors that make you addicted. They combine the flavor of annatto, orange, mango and the combination of pico de gallo, you have to try it.

  • 1/2 sticks achiote
  • 1 orange
  • 2 limes
  • 2 cloves garlic
  • 3 tablespoons white vinegar
  • salt and pepper
  • 1 salmon fillet
  • 2 tomatoes
  • 1/4 white onions
  • 1/4 bunches fresh cilantro
  • 2 mangoes
  • 4 tablespoons olive oil

  • Cut the salmon slice into medium cubes and reserve.
  • Blend orange and lemon juice, 2 cloves of garlic, vinegar and achiote (previously dissolved with a little hot water to make it liquid).
  • Marina the salmon with annatto mixture for one hour
  • For the pico de gallo: Chop the tomato, chili, mango and onion in small squares. Chop the cilantro finely.
  • Add all the ingredients in a bowl. Pour olive oil, salt and pepper to taste.
  • Fry the marinated salmon over medium heat until the sauce dries a little.
  • Serve with the pico de gallo.
