Salmon with pico de gallo

1/2 sticks achiote
1 orange
2 limes
2 cloves garlic
3 tablespoons white vinegar
salt and pepper
1 salmon fillet
2 tomatoes
1/4 white onions
1/4 bunches fresh cilantro
2 mangoes
4 tablespoons olive oil

Cut the salmon slice into medium cubes and reserve.
Blend orange and lemon juice, 2 cloves of garlic, vinegar and achiote (previously dissolved with a little hot water to make it liquid).
Marina the salmon with annatto mixture for one hour
For the pico de gallo: Chop the tomato, chili, mango and onion in small squares. Chop the cilantro finely.
Add all the ingredients in a bowl. Pour olive oil, salt and pepper to taste.
Fry the marinated salmon over medium heat until the sauce dries a little.
Serve with the pico de gallo.
