Salmon with Spice Crust

A delicious baked salmon made with a crust of bread, parsley, and olive oil.

  • 4 salmon fillet, fresh (200 grams each)
  • 3 slices sandwich bread
  • 1 cup parsley, fresh
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 3 tablespoons lime juice
  • 200 grams spinach, fresh
  • 1/2 red onions, julienned

  • Preheat the oven to 200 degrees Celsius.
  • Prepare a baking sheet with aluminum foil.
  • In a food processor, process the bread, parsley, 1 tablespoon of olive oil, and season with salt and pepper to taste.
  • Place the salmon fillets on the baking sheet and season with salt and pepper. Using a spoon, spread a layer of Dijon mustard over each fillet and top it with the breadcrumb mixture.
  • Bake the salmon for 11-13 minutes or 20 minutes if you decided to make a large fillet.
  • Meanwhile, in a deep bowl, combine the lemon juice and olive oil and season with salt and pepper. Add the onion and spinach and mix.
