1/4 cups mayonnaise
1 1/4 teaspoons chipotle chile, chopped in adobo
1 cup pineapple, diced
1/4 teaspoons piquín chile
1 tablespoon lime juice
1 teaspoon fresh ginger, peeled and finely chopped
2 tablespoons fresh cilantro
4 salmon fillet
2 tablespoons olive oil

Mix the mayonnaise with the chipotle peppers in a bowl.
Mix the pineapple with the piquin chili, ginger, cilantro, and lime juice. Season with salt and pepper.
Place the salmon in a pyrex dish and brush with a little olive oil. Sprinkle with salt and pepper.
Bake at 350 degrees for 15 minutes or until the salmon turns opaque.
Remove from the oven, spread a layer of chipotle mayonnaise and place the pineapple sauce on top.
Serve immediately.
