Salmon with Tropical Sauce

This salmon recipe features chipotle mayonnaise and pineapple sauce on top.

  • 1/4 cups mayonnaise
  • 1 1/4 teaspoons chipotle chile, chopped in adobo
  • 1 cup pineapple, diced
  • 1/4 teaspoons piquín chile
  • 1 tablespoon lime juice
  • 1 teaspoon fresh ginger, peeled and finely chopped
  • 2 tablespoons fresh cilantro
  • 4 salmon fillet
  • 2 tablespoons olive oil

  • Mix the mayonnaise with the chipotle peppers in a bowl.
  • Mix the pineapple with the piquin chili, ginger, cilantro, and lime juice. Season with salt and pepper.
  • Place the salmon in a pyrex dish and brush with a little olive oil. Sprinkle with salt and pepper.
  • Bake at 350 degrees for 15 minutes or until the salmon turns opaque.
  • Remove from the oven, spread a layer of chipotle mayonnaise and place the pineapple sauce on top.
  • Serve immediately.
