This salmon recipe has a chipotle mayonnaise and a pineapple sauce on top.

Ingredients

4 portions
  • 1/4 cups mayonnaise
  • 1 1/4 teaspoons chipotle chili, in chopped marinade
  • 1 cup pineapple, cut into cubes
  • 1/4 teaspoons pequin pepper
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh ginger, peeled and finely chopped
  • 2 tablespoons fresh coriander
  • 4 salmon fillets
  • 2 tablespoons olive oil

Preparation

Mix the mayonnaise with the chipotle chilies in a bowl.
Mix the pineapple with chili pepper, ginger, cilantro and lemon juice. Season with salt and pepper.
Put the salmon in a pyrex and spread with a little olive oil. Sprinkle with salt and pepper.
Bake at 350 degrees for 15 minutes or until salmon turns opaque.
Take out of the oven, put a layer of chipotle mayonnaise and put the pineapple sauce on top.
Serve immediately.

TIPS

Sometimes I add chopped tomato in cubes and it is also delicious. Accompany this dish with a Chardonnay wine.
