Salmon Wrapped with Citrus Salad and Mango Dressing

  • 2 mangoes
  • 1 grapefruit, (grapefruit)
  • 1 orange
  • 1 mandarin orange
  • 1 lime
  • 1 corsage lettuce
  • 1/2 red onions
  • 1/2 liters plain yogurt, skinned
  • 1/2 cups walnuts, toasted and chopped
  • 1/4 cups white wine, or red wine vinegar
  • 1/4 cups olive oil
  • 1 teaspoon dry rosemary
  • 1 teaspoon dried tarragon
  • 400 grams salmon, with skin

  • Salmon: Cut 4 squares of approximately 30 x 30 cm from the aluminum foil. Place a piece of salmon in the center of the foil. Season the salmon with salt, pepper, herbs, and a few drops of olive oil. Place a slice of lemon on top. Fold the edges of the foil until the salmon is completely wrapped. Place the wrapped fish on a baking tray and bake for 10 to 15 minutes at 120ºC.
  • Salad: Disinfect the lettuces and cut them into large pieces. Place in a bowl. Slice the red onion into rings. Remove the segments from the citrus fruits (grapefruit, orange, and mandarin). Be careful to remove all the white inner skin. Mix the ingredients together with the walnuts.
  • Dressing: Blend the pulp of two mangoes with white wine or white wine vinegar, olive oil, and natural yogurt. Season with pepper to taste.
