Balsamic Salmon

Prepare this easy salmon recipe with crunchy vegetables, in a sweet and sour balsamic vinegar reduction with honey and whole grain mustard, with a bit of finely chopped green onion. This dish is perfect for serving a complete meal in just a few minutes.

  • 1/4 cups olive oil
  • 4 fresh salmon, sliced, portions of 200g each
  • 1/2 cups asparagus, cut into 3
  • 1/2 cups carrot, cut into sticks
  • 1/2 cups bell pepper, cut into sticks
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tablespoon butter, for balsamic reduction
  • 1 tablespoon garlic, finely chopped, for balsamic reduction
  • 1 tablespoon ginger, finely chopped, for balsamic reduction
  • 3 tablespoons honey, for balsamic reduction
  • 1 cup balsamic vinegar, for balsamic reduction
  • 1/4 cups sugar, for balsamic reduction
  • 1 tablespoon old style mustard, for balsamic reduction
  • 2 tablespoons green onion stalks, finely chopped

  • Heat a skillet over medium heat with olive oil, cook the salmon in the skillet. Add the vegetables, season with salt and pepper, cover, and cook for 10 minutes. Remove the salmon from the skillet and keep covered, cook the vegetables for 5 more minutes and set aside.
  • Heat a small pot over medium heat and add the reduction ingredients, cook until it thickens into a sauce. Set aside.
  • Serve the salmon on top of the vegetables and add the balsamic reduction, sprinkling with the green onion tops. Serve and enjoy.
