1 can heart of palm, sliced thinly (for the salad)
3 tablespoons white vinegar, (for the salad)
5 tablespoons olive oil, (for the salad)

1 pinch ground black pepper, (for the salad)

Preheat the oven to 200° C.
For the Cajun salmon: mix all the Cajun ingredients in a small bowl with a spoon thoroughly. With a brush or kitchen brush, coat the salmon pieces evenly until all the mixture is used, let rest for 5 minutes.
Place the salmon pieces on a baking tray and bake for approximately 15 minutes.
For the salad: mix spinach, tomatoes, onion, and hearts of palm in a large bowl. Add vinegar and oil, season with salt and pepper, and mix very well.
