Cajun Baked Salmon and Spinach Salad

  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 tablespoon pimentón
  • 1 tablespoon dried thyme
  • 1 tablespoon black pepper
  • 7 tablespoons salsa, Huichol® Spicy Sauce
  • 2 tablespoons salt
  • 4 tablespoons olive oil
  • 4 fresh salmon
  • 4 cups spinach, (for the salad)
  • 1 cup cherry tomato, cut in half (for the salad)
  • 1/2 red onions, Thinly sliced filet (for the salad)
  • 1 can heart of palm, sliced thinly (for the salad)
  • 3 tablespoons white vinegar, (for the salad)
  • 5 tablespoons olive oil, (for the salad)
  • 2 pinches salt, (for the salad)
  • 1 pinch ground black pepper, (for the salad)

  • Preheat the oven to 200° C.
  • For the Cajun salmon: mix all the Cajun ingredients in a small bowl with a spoon thoroughly. With a brush or kitchen brush, coat the salmon pieces evenly until all the mixture is used, let rest for 5 minutes.
  • Place the salmon pieces on a baking tray and bake for approximately 15 minutes.
  • For the salad: mix spinach, tomatoes, onion, and hearts of palm in a large bowl. Add vinegar and oil, season with salt and pepper, and mix very well.
