Filet Mignon with Marionberry Ketchup

Prepare this delicious bacon-wrapped salmon filet mignon. It comes with a rich blackberry sauce with balsamic vinegar and spices. It's very easy to make and has great flavor. Impress with this elegant dish that is perfect for a dinner or special occasion.

  • 8 salmon fillet, skinless
  • 4 smoked bacon
  • 1/2 teaspoons salt
  • 1/4 teaspoons pepper
  • 1/4 cups vegetable oil
  • 1 cup blackberries
  • 100 grams brown sugar
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoons cinnamon
  • 1/2 teaspoons ground pepper, all spice mix
  • 1/2 teaspoons ground ginger
  • 1 pinch clove

  • Preheat the oven to 200 °C.
  • Save some blackberries for decoration, puree the rest until smooth.
  • For the sauce, heat the blackberry puree in a pot along with the rest of the ingredients until the mixture thickens.
  • Roll up the salmon fillets, using two fillets to form a wheel. Wrap a strip of bacon around each salmon and secure it with a toothpick.
  • Sear the salmon fillets on both sides. Bake until a thermometer inserted into the center of the salmon reads 50 °C.
  • Remove the toothpicks and glaze the fillets with the blackberry sauce. Place some blackberries on top for decoration.
