Grilled Salmon with Avocado Sauce

  • 6 árbol chiles, seeded, deveined and soaked, for the marinade
  • 1 clove garlic, roasted on a griddle, for the marinade
  • 1/4 onions, roasted on a griddle, for the marinade
  • 1/4 cups orange juice, for the marinade
  • 1 teaspoon dried oregano, for the marinade
  • 1/2 teaspoons cumin, ground, for the marinade
  • 2 pinches jaimacan pepper, for the marinade
  • 1 teaspoon salt, for the marinade
  • 1 tablespoon vegetable oil, for the marinade
  • 500 grams salmon, skinless, cut into 4 fillets
  • 2 slices pineapple, for the sauce
  • 1 Avocados from México, cut into large cubes, for the sauce
  • 1/4 red onions, finely chopped, for the sauce
  • 2 stems green onion, chopped, for the sauce
  • 2 teaspoons lemon juice, for the sauce
  • 1 tablespoon dill, chopped, for the sauce
  • 1/4 teaspoons salt, for the sauce
  • 1/4 teaspoons black pepper, ground, for the salsa

  • For the marinade, in a blender, puree the árbol chile with garlic, onion, orange juice, oregano, cumin, whole Jamaican allspice, salt and oil.
  • Cover the salmon fillets with this adobo and allow to rest refrigerated for 20 minutes.
  • Warm a grill pan and cook salmon to desired doneness. On the same pan, grill the pineapple on both sides. Cut the pineapple into small cubes and cool.
  • Cut pineapple into medium dice, and mix in a bowl with avocado, red onion, scallions, lemon juice and dill. Season with salt and pepper.
  • Serve the salmon with the avocado salsa and enjoy.
