One of the most traditional dishes in Mexican cuisine is mole. Here we present a delicious recipe for grilled salmon with a tasty Rojo Almendrado Cocina Mestiza® mole.
Prepare the mole: In a pot, heat the chicken broth and add the Rojo Almendrado mole. Whisk until you obtain a smooth and liquid sauce. Keep the mole on the stove with the heat off.
Preheat a large griddle with oil. Season the salmon fillets with salt and pepper. When the griddle is hot, add the salmon fillets skin-side down first. Let them brown and then flip. Cook leaving a section in the middle almost raw.
Place the salmon fillets on a serving plate and drizzle with the mole. Sprinkle sesame seeds on top and arrange the plantain on the side.
