Cook this Lemon Salmon in Foil recipe, which features a cilantro and lemon glaze that will give it a unique flavor. To make this salmon recipe perfect, you can request the salmon fillet portioned into 200-gram fillets and make them individually.
In a pot over medium heat, melt half a cup of I Can’t Believe It’s Not Butter® and add the garlic, cooking for a few minutes to release the aroma and lightly brown. Add the serrano pepper, lemon juice, honey, and cilantro, cook for 1 minute, and remove. Let cool.
On a baking sheet lined with aluminum foil or parchment paper, arrange the asparagus, bell peppers, zucchini, and carrots. Add 1 tablespoon of I Can’t Believe It’s Not Butter® and season with chili flakes, salt, and freshly ground pepper.
Place the salmon fillet on top of the vegetables, season with salt and pepper. Pour the cilantro and lemon mixture over the salmon and seal.
Bake for about 20 minutes or until the salmon and vegetables are cooked.
Remove from the oven, open, and decorate with slices of yellow and green lemon, and fresh cilantro.
