  • 2 cloves garlic, sliced
  • 1 tablespoon serrano chile, finely chopped
  • 3 tablespoons lime juice
  • 4 tablespoons honey
  • 1/3 cups fresh cilantro, finely chopped
  • 1 bunch asparagus
  • 1 cup bell pepper, colorful, sliced
  • 1 cup pumpkin, sliced
  • 1 cup carrot, cut into sticks
  • 1 tablespoon I Can't Believe It's Not Butter®
  • salt and pepper
  • 1 tablespoon chile flakes
  • 1 salmon, in fillet, skinless
  • 1 lemon, sliced, for decoration
  • 1 lime, sliced, for decoration
  • fresh cilantro, for decoration

  • Preheat the oven to 180°C.
  • In a pot over medium heat, melt half a cup of I Can’t Believe It’s Not Butter® and add the garlic, cooking for a few minutes to release the aroma and lightly brown. Add the serrano pepper, lemon juice, honey, and cilantro, cook for 1 minute, and remove. Let cool.
  • On a baking sheet lined with aluminum foil or parchment paper, arrange the asparagus, bell peppers, zucchini, and carrots. Add 1 tablespoon of I Can’t Believe It’s Not Butter® and season with chili flakes, salt, and freshly ground pepper.
  • Place the salmon fillet on top of the vegetables, season with salt and pepper. Pour the cilantro and lemon mixture over the salmon and seal.
  • Bake for about 20 minutes or until the salmon and vegetables are cooked.
  • Remove from the oven, open, and decorate with slices of yellow and green lemon, and fresh cilantro.
