Mix dijon mustard, oil, and maple syrup in a bowl.
Season the salmon fillets with salt on both sides and place them in the bowl with the marinade. Let them rest for 1 hour, covered in the refrigerator.
Add a bit of oil to a baking tray and place the salmon fillets, brush them with the marinade, and bake at 180°C for 10 minutes. Remove the salmon from the oven and brush again with the marinade. Return to the oven for 5 more minutes.
