The potato pancakes with smoked salmon are ideal for the main dish of a brunch. They are very easy to make and the mixture is left to suck your fingers.
The potatoes are peeled and grated. Once grated, they are squeezed with a kitchen towel to remove the excess liquid and put in a large bowl. The onion is finely chopped and added to the bowl with the grated potato. Salt and pepper are added to taste.
The egg is lightly beaten and added to the potato and onion mixture. Add the two tablespoons of flour and mix lightly.
Heat enough olive oil in a frying pan. Once the oil is hot, pancakes of the grated potato mixture of about two or three tablespoons are placed in the pan.
Fry the pancakes until the potatoes are cooked and browned (approximately 10 minutes). They have to be turned over so that both sides of the potato pancake are golden brown.
Once all the pancakes are ready, they are served with smoked salmon and cream cheese.
