Potato Pancakes with Smoked Salmon

Potato pancakes with smoked salmon are perfect for the main dish of a brunch. They are very easy to make and the mixture is finger-licking good.

  • 2 potatoes
  • 1/2 onions
  • 1 egg
  • 2 tablespoons flour
  • 1/2 cups olive oil
  • 500 grams smoked salmon
  • 1 package cream cheese
  • 1 bunch chives

  • The potatoes are peeled and grated. Once grated, they are squeezed with a kitchen cloth to remove excess liquid and placed in a large bowl. The onion is finely chopped and added to the bowl with the grated potato. Salt and pepper are added to taste.
  • The egg is lightly beaten and added to the potato and onion mixture. Two tablespoons of flour are added and mixed lightly.
  • In a frying pan, enough olive oil is heated. Once the oil is hot, pancakes made from the grated potato mixture of about two or three tablespoons are placed in the pan.
  • The pancakes are fried until the potatoes are cooked and golden (about 10 minutes). They need to be turned so that both sides of the potato pancake are golden.
  • Once all the pancakes are ready, they are served with smoked salmon and cream cheese.
