400 grams fresh salmon
4 tablespoons lime juice
2 tablespoons olive oil
1 teaspoon white vinegar
salt
pepper
3 tablespoons fresh cilantro, (leaves)

Freeze the salmon for 30 minutes until it is firm.
Remove from the freezer and cut into 1 cm squares.
Mix lemon, oil, vinegar, cilantro, salt and pepper. Add the fish and stir.
Fill 4 ramekins with this mixture and squeeze a little. At the mere hour flip them on the plate they are going to serve.
