Salmon and cilantro tartare

  • 400 grams fresh salmon
  • 4 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon white vinegar
  • salt
  • pepper
  • 3 tablespoons fresh cilantro, (leaves)

  • Freeze the salmon for 30 minutes until it is firm.
  • Remove from the freezer and cut into 1 cm squares.
  • Mix lemon, oil, vinegar, cilantro, salt and pepper. Add the fish and stir.
  • Fill 4 ramekins with this mixture and squeeze a little. At the mere hour flip them on the plate they are going to serve.
