Salmon and Cilantro Tartare

  • 400 grams fresh salmon
  • 4 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon white vinegar
  • salt
  • pepper
  • 3 tablespoons fresh cilantro, (the leaves)

  • Freeze the salmon for 30 minutes until firm.
  • Remove from the freezer and cut into 1 cm cubes.
  • Mix lemon, oil, vinegar, cilantro, salt, and pepper. Add the fish and stir.
  • Fill 4 ramekins with this mixture and press down a bit. When ready to serve, turn them upside down on the plate.
