400 grams fresh salmon
4 tablespoons lemon juice
2 tablespoons olive oil
1 teaspoon white vinegar
salt
pepper
3 tablespoons fresh cilantro, (the leaves)

Freeze the salmon for 30 minutes until firm.
Remove from the freezer and cut into 1 cm cubes.
Mix lemon, oil, vinegar, cilantro, salt, and pepper. Add the fish and stir.
Fill 4 ramekins with this mixture and press down a bit. When ready to serve, turn them upside down on the plate.
