Salmon Croquettes with 3 Chile Dressing

Give a twist to your usual croquettes and prepare these delicious salmon croquettes filled with cheese, accompanied by a three chile dressing. They are soft on the inside and crunchy on the outside, and the spicy dip will delight you. Perfect for Lent!

  • 1 tablespoon vegetable oil
  • 500 grams salmon fillet
  • salt and pepper
  • 1/4 cups Parmesan cheese
  • 1 teaspoon garlic, finely chopped
  • 1/2 teaspoons dill
  • 2 potatoes, cooked and mashed
  • 2 eggs
  • 5 tablespoons breadcrumbs
  • 1 cream cheese, 190g
  • flour
  • 2 eggs, smoothie
  • corn flakes, crushed
  • vegetable oil, for frying
  • 1/2 cups mayonnaise
  • 1 cup sour cream
  • 1 árbol chile, deveined and hydrated
  • 2 chipotle chiles, deveined and hydrated
  • 1/8 onions
  • 1 clove garlic
  • 1 tablespoon salt
  • 1/2 teaspoons pepper

  • In a pan, heat the oil and cook the salmon previously seasoned with salt and pepper.
  • On a cutting board, place the salmon and shred it with the help of two forks.
  • In a bowl, mix the salmon with the parmesan cheese, garlic, dill, potato, egg, and breadcrumbs, seasoning with salt and pepper. With your hands, form the croquettes placing a little cream cheese in the center.
  • Coat the croquettes by passing them through flour, egg, and finally cornflakes.
  • In a small pot with hot oil, fry the croquettes until golden and drain on paper towels.
  • For the dressing, blend the mayonnaise with the cream, the chiles, onion, garlic, salt, and pepper until you have a smooth mixture.
  • Serve the croquettes on a plate and accompany with the chile dip. Enjoy.
