Salmon in Tree Chili Sauce

  • 1/2 cups dried árbol chile, for the sauce
  • 1/2 cups almonds, fileted, for the sauce
  • 1/3 cups sunflower seeds, for the sauce
  • 2 cloves garlic, finely chopped, for the sauce
  • 1 cup Oli de Nutrioli® olive oil, for the sauce

  • 2 salmon fillet, (150 to 200 g each)
  • 2 cups asparagus, chopped
  • 2 potatoes, cut into wedges
  • 1 sweet potato, cut into wedges
  • lemon, in slices, for decoration

  • Preheat the oven to 180°C.
  • For the macha sauce, grind the chiles in a molcajete until slightly crushed.
  • In a skillet over medium heat, toast the almonds and sunflower seeds. Add the garlic and one cup of Nutrioli® olive oil, cook for 10 minutes over low heat until the almonds are golden, stirring constantly. Season with salt and cool.
  • In a baking dish, place the salmon fillets and add the tree chili sauce, marinate for 15 minutes.
  • Place the salmon on a baking tray, add the asparagus, potatoes, and sweet potatoes, brush the vegetables with the sauce, season with salt and pepper, and bake for 25 minutes.
  • Serve accompanied by pasta.
