Salmon with Creamy Avocado Sauce

  • 2 salmon fillet, 200g each
  • 1 tablespoon olive oil
  • 1/2 tablespoons coarse salt
  • 1/2 teaspoons pepper
  • 1 tablespoon dill
  • 1/2 teaspoons basil
  • 1 tablespoon garlic, chopped
  • 1 tablespoon butter
  • 1 avocado, for the sauce
  • 1/4 cups basil, for the sauce
  • 1 clove garlic, for the sauce
  • 1 tablespoon lime juice, for the sauce
  • 1/2 tablespoons olive oil, for the sauce
  • 1/4 cups whipping cream, for the sauce
  • 3/4 cups cow's milk, for the sauce
  • salt and pepper, for the sauce
  • dill, finely chopped, for garnish
  • lemon, in slices, for garnish

  • In a bowl, marinate the salmon with olive oil, coarse salt, pepper, dill, basil, and garlic for 30 minutes.
  • Heat a skillet with butter over medium heat and cook the marinated salmon for 10 minutes or until desired doneness.
  • For the avocado sauce, blend all the ingredients until you have a smooth mixture. Set aside.
  • Serve the salmon on a plate and pour the sauce over it. Garnish with chopped dill and slices of yellow lemon.
