Salmon with Vegetables

A delicious family recipe, salmon with vegetables is perfect for a light lunch or dinner, very simple to prepare, with the necessary nutrients for your day.

  • 500 grams salmon
  • salt , and black pepper
  • 1 lemon
  • 2 carrots, large
  • 100 grams asparagus
  • 100 grams green beans, green beans
  • 1 zucchini , Italian (zucchini)
  • 1 cup corn, (corn)
  • 1 cup vetch
  • 1 cup whipping cream
  • 1 tablet vegetable broth
  • olive oil

  • Preheat the oven to 200 degrees.
  • In a tray or dish like Pyrex, place aluminum foil, add the salmon, season with salt and pepper, and marinate with lemon, close the aluminum foil and bake for about 20 minutes.
  • In a wok, put the chopped vegetables, diced zucchini, sliced carrot, rectangular asparagus, green beans also in rectangular shape, and a splash of olive oil, steam for about 5 to 6 minutes, then add the peas and corn, season with pepper and the crushed vegetable broth cube.
  • When the vegetables are soft, turn off the heat and add the cream.
  • Remove the salmon from the oven, open the aluminum foil, add a splash of olive oil, and place the vegetable mixture on top.
  • Enjoy with a good white wine!!!!
