Salmon Wrapped in Bacon with Guacamole

  • 3 avocados, for the guacamole
  • 1/4 cups lemon juice, for the guacamole
  • 1/4 cups Jalapeño chile, finely chopped, for the guacamole

  • 2 tablespoons butter, for the glaze
  • 2 tablespoons garlic, finely chopped, for the glaze
  • 1 Habanero chile, for the glaze
  • 1 tablespoon ginger, finely chopped, for the glaze
  • 1/4 cups honey, for the glaze
  • 1/4 cups orange juice, for the glaze
  • 2 tablespoons lemon juice, for the glaze
  • 10 slices bacon
  • 4 salmon, cut in 200 gram slices
  • lemon, in wedges, to serve
  • lettuce, for serving
  • avocado, in slices, for serivng

  • Preheat the oven to 200°C. (392°F)
  • In a bowl, mash the avocados until they form a puree. Add the yellow lemon juice, the jalapeño pepper, the cilantro, the habanero pepper, the salt and the pepper. Set aside.
  • Heat a pot over medium heat with the butter, cook the garlic and ginger for a few minutes. Add the honey, the orange juice and the yellow lemon juice. Cook until you reduce and reserve.
  • On a cutting board place the salmon, season with salt and pepper wrap with the bacon, place it in a baking tray and bake for 10 minutes. Remove from the oven, add the glaze and cook 5 more minutes, serve with the guacamole, yellow lemon, avocado and green leaves.
