Salmón Envuelto en Tocino con Guacamole

If you thought that the salmon could only be cooked sealed, we present now the best recipe for Bacon Wrapped Salmon with Guacamole. This soft wrapped salmon comes with glazed citrus along with honey and chipotle, without a doubt the spicy touch that will highlight the flavor. Ingredients

4 servings
  • 3 pieces of avocado for the guacamole
  • 1/4 of Cup of yellow lemon juice for the guacamole
  • 1/4 of Cup of jalapeno pepper finely chopped, for the guacamole
  • to taste of salt and pepper
  • 2 spoonfuls of Butter for the glaze
  • 2 spoonfuls of garlic finely chopped, for the glaze
  • 1 piece of habanero pepper for the glaze
  • 1 tablespoon of ginger finely chopped, for the glaze
  • 1/4 of Cup of honey for the glaze
  • 1/4 of Cup of orange juice for the glaze
  • 2 spoonfuls of yellow lemon juice for the glaze
  • 10 slices of bacon
  • 4 pieces of Salmon cut in 200 gram slices
  • enough of yellow lemon in wedges, to serve
  • enough of lettuce for serving
  • enough of avocado in slices, for serivng

    Preparation

    Preheat the oven to 200°C. (392°F)
    In a bowl, mash the avocados until they form a puree. Add the yellow lemon juice, the jalapeño pepper, the cilantro, the habanero pepper, the salt and the pepper. Set aside.
    Heat a pot over medium heat with the butter, cook the garlic and ginger for a few minutes. Add the honey, the orange juice and the yellow lemon juice. Cook until you reduce and reserve.
    On a cutting board place the salmon, season with salt and pepper wrap with the bacon, place it in a baking tray and bake for 10 minutes. Remove from the oven, add the glaze and cook 5 more minutes, serve with the guacamole, yellow lemon, avocado and green leaves.

    PRESENTATION

    Serve the salmon with the guacamole.

    TIPS

    First fry the bacon before glazing to make it crispy.
