Teriyaki Salmon with Pineapple

  • 1/2 cups teriyaki sauce
  • 1 teaspoon fresh ginger, chopped
  • 1/2 teaspoons fennel, dry
  • 1/4 cups orange jam
  • 1/4 cups canned pineapple syrup
  • 800 grams salmon, cut into 200-gram fillets each

  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 2 tablespoons vegetable oil
  • 2 cups basmati rice, cooked, for serving
  • sesame seeds, for garnish
  • chives, for serving

  • In a pot over medium heat, heat the teriyaki sauce and add ginger, fennel, orange marmalade, and the syrup from the pineapple, and simmer for 5 minutes.
  • Season the salmon with salt and pepper and cook in a skillet over medium heat with oil to your desired doneness.
  • Add a little more sauce and cook until you obtain a thick and shiny sauce, basting occasionally with the sauce.
  • In a bowl, place the pineapple slices and cover them with some of the remaining sauce, grill over high heat until marked on both sides.
  • Serve the salmon over a bed of basmati rice and garnish with pineapple, scallions, and sesame.
